Healthy Summer Breakfast Recipe – Best Start for the Day

Hope you’re amazing! I’m back in the UK and getting myself back on track with the usual routine after a week of adventures aka house moving. Never thought that moving is a dangerous sport, but in this mighty city it is. This has been one of the most stressful weeks I had in a while and I’m so glad it’s over. Phew! The one constant I had while packing, unpacking, repacking and unpacking again (yes that many times, if not more in a week!) was breakfast. I’m so, so grateful for that! It brought balance and some sort of structure to my days. You’ll love this healthy summer breakfast! 

You know, we hear it all the time how breakfast is the most important meal of the day and that’s so true! I’m not talking about the full English breakfast, though that has its place for brunch once in a blue moon, but a fresh, nutrient dense, alkalising one that will give you energy, rather than take it away to use it for digesting a heavy meal.

Whether it’s a massive fruit salad with nuts, seeds and nut butter, a green smoothie or a warming porridge, breakfast is a big deal to me. The key is in the nutrient dense ingredients that give you the needed fuel for getting through your morning/mid day. And once you have that sorted, a third of your day is already achieved in a healthier manner, so you’re more likely to have a productive outlook for the rest of the day. I’m sending you this email now so that you can already give it a go tomorrow morning.

Having officially entered summer (or not, depending on where you are right now), I’m sharing with you, my favourite summer breakfast. It’s the mighty fruit bowl, dressed to impress. If you add chia seed pudding and nuts, plus nut butter it will keep you full for longer. If not, make sure you have a BIG portion or pair it with a smoothie. That’s how I usually do it and I’m having a blast on it, sometimes even for half a day, depending on the size. I start with the fruit salad and sip through 500ml of smoothie till my next meal.

 HEALTHY SUMMER BREAKFAST 

(makes two or a very large portion)

INGREDIENTS:

– 1 mango / or 2 peaches/nectarines if mango’s not easy to find where you are
– 1 apple 
– 1 handful grapes 
– 1 small papaya/ or 5-6 apricots if you can’t find it
– 1 banana 
– 1/2 avocado 
– 1 handful blueberries 
– any other fruits your have in your fruit bowl

– 1 handful walnuts, soaked overnight 
– 2 spoons tahini / nut butter 
– 1 spoon poppy seeds 
– 1 tsp cinnamon 
– 1 squeeze lemon 
– 2 spoons cacao nibs 
– 2 spoons coconut flakes 

HOW TO: 

This is fairly simple and straight forward, yet is one of the most delicious things. The quality of fruits will determine that, so make sure they’re as ripe and fresh as possible. 

1. Wash and chop all fruit in small cubes or slices, depending on your preference and add to a large bowl.
2. Add the walnuts, tahini / nut butter, poppy seeds, cinnamon, lemon, cacao nibs and coconut flakes and mix gently together until all tings are incorporated. The fruit juices with the spices will create magic.
3. Serve and enJOY 🙂

If the portion is too big, save some for later, you’ll be very grateful when hunger kicks in.
