Pre-Workout Vegan Breakfast – Oat Chia Pudding Recipe

Someone asked me the other day what sort of breakfast should they have pre-workout and I thought this is the best way to kick off the new series of the Second Nature Breakfast Show!

This pre-workout vegan breakfast with Oat Chia Pudding is good for you whether you’re vegan, vegetarian or “fooditarian(yes, I just made that one up!).  Hecks, even if you’re not going to work out, but need some energy to sustain a long day – start with this and a green smoothie and you’re sorted till late lunch. 

Feel free to adapt to your needs by adding more nut butters (tahini, almond, peanut, hazelnut etc) and mixing more oats with chia and dried fruit to get more calories (if you’re proper training and need it!).

RECIPE

OAT CHIA PUDDING 

INGREDIENTS

(I’ve altered the quantities from the video for one portion)

1/4 cup oats 
350ml water 
1 tablespoon cacao
1 tablespoon raisins / 1 banana 
1 tsp cinnamon 
1 pinch salt 
 
2 tablespoons chia 
1 teaspoon flax seeds
2 nectarine (or any ripe, soft fruit)
1 teaspoon cacao nibs
1 tsp bee pollen
1 tablespoon coconut flakes
 
 
HOW TO
 
Blend the oats with the water, cacao, raisins, cinnamon and pinch of salt. 
 
Soak the chia seeds in 250ml of the oak drink. 
 
Leave overnight or for at least 25 minutes to expand and then decorate with fruit, nibs and coconut flakes or whatever you have around.
